Preparation recommendation: short roast or grill
Sear the rib-eye over high heat in a pan or on the grill on both sides. Then let it simmer at low temperature in a moderate zone of the grill or pan to the desired cooking point. Season on both sides with good salt and pepper if necessary and leave to rest for a while before serving.
The aromatic taste of rib-eye in particular is best brought out by frying or grilling it at a high temperature. The high temperatures create great roasting aromas and the meat remains juicy.
